Recipe for Organic Chicken Cooked in Cider
Chicken is quite rightly one of the most popular meats in the world.
It is almost fat free, is a great source of protein, highly versatile and plays a major part in many diet recipes. If you can get hold of an organic free range chicken, that will be better still, as it will be a purer meat, with less chance of it containing added hormones. It’s also a good policy for animal welfare, as many of the supermarket chickens are kept in conditions that are pretty scandalous.
If you are not trying to lose weight, there is no need to worry, not all chicken recipes are diet recipes. Even so, most chicken recipes will be, by and large, healthier for you than a similar recipe cooked using alternative meat, such as pork or lamb.
Here is an easy to cook recipe that is sure to impress both family and friends.
To prepare this recipe, you will need:
One chicken (approx. 3.5 lb)
2 C. of cyder
6 ea. Apples (peeled and quartered)
salt (as required)
pepper (as needed)
One teaspoonful cornstarch
Half cupful light whipping cream
1 Tbls of freshly squeezed lemon juice
1/3 C. of butter
Two Tbls of olive oil
1/4 tsp. cinnamon (not obligatory)
4 green onions, (chopped well)
Two whole cloves
A quarter tsp. ground ginger
One sprig of parsley, (chopped well, for the garnish)
1/2 teaspoonful thyme
Two tsp. of brown sugar
Method:
Wash the Organic Chicken and dry it well.
Combine the salt and pepper and rub it into the organic chicken (both inside and out)
Drizzle the lemon juice over the pieces of apple.
Melt half the butter in a large frying pan then add the oil.
Add half of the apples to the pan and cook slowly for 5 min. until browned slightly
Add the ground ginger and stir well, frying a little longer to enable the ginger to release it’s flavours.
Stuff the bird with the apple mixture and close the cavity by string or by threading with a skewer.
Add the rest of the butter to the pan and heat until it melts and then add the chicken to the skillet and gently brown it, browning it all over.
Put the organic chicken into a big oven ready casserole dish with a tight fitting lid.
Take the rest of the apple, the spring onions, ground cinnamon, thyme, sugar and cloves and transfer them to the pan.
Heat for a couple of minutes and pour in the apple cyder and increase the heat to start the mixture boiling.
When the cider is boiling, pour it over the bird and put the lid on the pot.
Put the pot in the oven and cook for about three quarters of an hour at 400 Fahrenheit
Once the chicken is cooked, remove the chicken from the pot and put onto a warm plate whilst you prepare the cider gravy.
Skim the fat from the contents of the casserole pot and then boil off the juices until there is just about one cup full remaining.
Mix in the cream and cornstarch, mixing well until it is nice and thick.
Season to taste, and pour the gravy over the cooked chicken
Serve with the chopped parsley sprinkled over the chicken.
If you want to keep the whole meal healthy, you could add side servings of asparagus or green beans and new potatoes.
