Green Tea is often called an unfermented tea. Leaves are still hand-rolled to expose essential oils then dried in a clay oven to seal in the goodness. Heating stops the oxidation/fermentation process then it is packed and shipped immediately providing superior quality every time. The resulting tea is very delicate. Given the high levels of polyphenols, it is believed to provide the most significant health benefits of all teas.
There is evidence that regular green tea drinkers have lower chances of heart disease and developing certain types of cancer. While providing the health benefits of Green Tea, Ceylon Green Tea has a slightly richer flavor then traditional Green Tea. Adam Green Tea is delicate and smooth, with a light color, and hint of sweet. Sri Lankan Green Tea is extremely exclusive. It is unique and different and sure to please.
To prevent over cooking the leaves and destroying their subtle notes, Green Tea should be brewed in water that is well below boiling.
